  1. Use 750 g icing sugar
  2. Take 30 ml Golden syrup
  3. Use 30 ml lemon juice
  4. You need 11/2 tbs Gelatin
  5. Take 30 ml water
  6. Use 1 tbs Glucose syrup
  7. Take 1 tbs glcerine

  1. Add water together with the lemon zest in a bowl and add Gelatin in it and let it settle for it to form a sponge like thing.(You should sprinkle the Gelatin on top of the water)
  2. Using a double boiler or microwave melt the Gelatin mixture and add Golden syrup, shortening,glucose, glycerin and return it to the double boiler for it to melt
  3. In a separe bowl add 500g icing sugar and make a well at the center then pour the Gelatin mixture and use the the 250g remaining to knead it into a smooth fondant
  4. You should knead pushing the fondant infront for it to stretch well…cover your fondant with cling film or in a ziplock bag
